(Serves 4)

  • 12 fresh eggs
  • 50g butter
  • 200g chopped tomatoes
  • 200g chopped avocado
  • 10g chopped fresh chilies
  • 10g chopped chives
  • Olive oil
  • Cornish sea salt
  • Freshly milled pepper


  • Whisk eggs together and season well
  • Mix the tomato, avocado, chili, chives and olive oil to make a little salsa and set aside
  • Melt the butter in a thick bottom pan and cook the scramble eggs
  • Place into four pots and spoon over the avocado salsa
